Combining the rich soils of Australia with the umami laden nature of Japanese shochu tradition, we harness the rich, natural character of Australian sweet potatoes by steaming them to perfection. Fermented with hand-made Australian Koshihikari rice koji, our Imo shochus' deep, earthy nature gives way to fragrant notes, resulting into a unique glimpse of what we believe is the future of Australian hand crafted spirits. The black koji in this variant gives the spirit its deep earthy and umami flavour, with floral notes on the back.
At 50.7% ABV, this single atmospheric distilled shochu is packed full of flavour at a high proof, deeply aromatic and full-bodied. Landing with a clear, earthy sweetness and an oil packed warm, velvety finish that reflects the soul of the potato. Enjoy it with hot water (Oyuwari) to release its full aroma, with cold water (Mizuwari), or as a deeply flavourful and unique base in any modern cocktail.
