Mugi - White Koji

A shochu built from the ground up, fit for the streets. Fermented with the best Victorian pearl barley we could find, combined with pure local water and our hand made Australian Koshihikari koji rice to building a complex base of subtle umami and gentle sweetness.

Our white koji mugi style is a light, fragranced expression with citrusy floral notes and a savoury, umami laden new make feel with hints of roasted coffee.

​The result is a single distilled spirit with a warm, roasted barley aroma that lands with deep, nutty flavours of toasted cereal, all balanced by the smooth earth of our koji. Enjoy our Mugi neat, on the rocks (Rokku) or with hot water (Oyuwari) to release its full character, or use it as a perfect crisp addition to a Chu-Hai, Oolong-Hai, or in your favourite cocktail.
