Australian shochu and sool brewery and distillery
Tano Spirits is an Australian craft brewery and distillery in Northcote, Melbourne, dedicated to the koji and nuruk fermentation traditions of Japan and Korea. We are a koji and nuruk brewery, distillery and shochu bar under one roof, and we grow our own koji and nuruk in house. With them we brew Korean sool, including makgeolli, cheongju, takju and other rice brews, and we distil honkaku shochu, jagari shochu, awamori and soju. Everything is built on Australian ingredients, from Far North Queensland jaggery and locally grown Koshihikari rice to native botanicals. Our bar is open to visitors, pouring our own brews and spirits alongside a curated range of Japanese shochu and Korean sool. Everything we release is fermented, brewed, distilled and bottled on site in small batches, so brewing and distilling sit side by side in the same room.
