Jagari Shochu: How a Japanese Island Tradition Ended Up in a Northcote Distillery
"Jagari" is Tano Spirits' Melbourne-made jaggery shochu, a distinctly Australian riff on the kokuto shochu tradition of Japan's Amami Islands. Built on non-centrifugal jaggery from the Cardwell Company in Far North Queensland and handmade Koshihikari rice koji. It comes in two expressions, Black Koji and White Koji, each telling a different side of the same story.
